Apricot Glazed Pork Chops! A chilled Chardonnay completes the meal!

Three nice thick Pork Chops, veggies, garlic, apricot jam, apple cider, soy sauce and 21 Seasoning Solute Seasoning. Sorry, the russet potato is not in the picture. It’s optional.

THAT SIMPLE and SO Delicious! The bottle of Chardonnay should be in the fridge chilling.

Simple 21 Seasoning Salute from Trader Joe’s. Let the Chops rest before placing in the oven. Set the oven at 350,  the chops need to bake about 45 minutes. Let’s set out everything for the glaze and get the veggies going. And, pour some chilled wine.

 

One jar of Apricot Jam. It’s supposed to be only a cup but with what was left, forget it, the whole thing is going in!

3 Tablespoons of Apple Cider Vinegar

1 tablespoon AND 1 teaspoon of Soy Sauce (I use the light soy)

2 teaspoons of fresh Ginger (I ask the Sushi person behind the counter at Ralphs for a little plastic container of it)

2 teaspoon minced garlic

Pour a little more wine.

The Kitchen is about to smell delicious!  Place the Pork Chops in the oven. Set a timer for 7 minutes. You will want to lightly glaze them then.

I hope you have some sort of steamer. For $20, it makes it much easier and you keep your vitamins intact versus boiling them. Going through Chemo, I would save the water and have to drink it the next morning to capture every nutrient I could. To be honest, it wasn’t that bad. Not Cheerios but not that bad.

 

Ok, you have everything going but the glaze and the baked potato Poke some holes in that clean-scrubbed bake potato and get it in the microwave for at least 12 minutes.

Start the heat of the glaze to a medium, add everything and stir slowly. You will smell when it’s done! Please don’t burn it, once it’s a nice and not too sticky, it’s done! Pull it off the burner and keep stirring about 5 minutes tops! You should have a timer going off right now anyway.

Take the pork chops out and glaze them, place them back in. You will want to turn them and glaze again.

When your timer goes off for the chops. Pour the remaining glaze over each one and plate.
