Rasberry Chicken! With a crisp Chardonnay Wine!
4 Chicken breast. Ken’s Walnut Raspberry Lite Salad dressing. Red onion. Garlic minced cloves. 21 Seasoning Solute. Cauliflower as a veggie. Rice as a side dish and watermelon to finish off a fresh lite dish. Never forgetting the wine! A simple chardonnay is a perfect finish to this memorable dish.
Season the chicken with the trick seasoning most don’t know about “21 Seasoning Salute” you can only find this at Trader Joes. Dice about half of the red onion. Spread around the diced onion over the chicken. Depending on how much you love garlic (I happen to love it), add a tablespoon of minced garlic depending. Cover and place in the fridge to sit for at least a half hour to marinate.
Set the oven to 375 and pour a glass of wine!
Afer marinating, take the chicken out and allow it to set. You never want to place cold meat or poultry directly into the oven. Just enjoy your glass of wine as you finish the prep work. After 10 minutes, place the covered chicken in the oven for about 40 minutes.
Cauliflower is so simple. I gage the water amount by using my index finger so the cauliflower isn’t under water. Add as much butter and pepper to your liking. At the same time as you have the chicken in the oven. Simotaniuosly, with low heat, start cooking the cauliflower.
Now the rice. This is the final stretch, pour another glass of wine. Start the rice 15 minutes before the chicken and cauliflower would be done. It’s simple minute rice. My Mother taught me a neat trick. Instead of water, she uses chicken broth! It fits in the perfect amount of salt and seasoning for rice. Equal cup of broth to the cup of rice.
